Vegan Soft-Serve Ice Cream

During the hot months of summer, nothing sounds quite as refreshing as a bowl of ice-cold, creamy, and delicious  soft serve -one that’s free of dairy and refined sugar.  It provides many vitamins, and lots of energy.  This simple and nutritious recipe is  a creamy and refreshing treat that can be eaten all summer long!

Simple Vegan Vanilla Soft-Serve

Serves 1-2

  • 4 frozen, ripe bananas (from bananas frozen after brown speckles  formed on the peels)
  • 1 cup of vanilla coconut ice cream, such as So Delicious(or another dairy-free ice cream).  You can also omit the ice cream, and it will still taste great!
  • maple syrup to taste

Put four frozen bananas in a blender or food processor.  Add the vanilla ice cream and blend until mixture has turned into a smooth and creamy consistency. Poor the soft-serve into a dish and drizzle the top with maple syrup if desired. That’s it, a big bowl of creamy, delectable soft serve in only a few minutes! 🙂

For a chocolate version: simply substitute the vanilla ice cream for chocolate ice cream, or add four tablespoons of cocoa powder to the mix.

For a blueberry version: add a half cup of frozen blueberries.
